In order to establish an accurate assay for meat products derived from animals,a specific PCR assay was developed based on the specific genes of pigs, cattle, horses, goats, mice, rats, rabbits, dogs, chickens, ducks and geese using a bioinformatics method, which, with high specificity, could detect meat samples from pigs, cattle, horses, goats, rabbits, dogs, chickens, ducks and geese, and identify prohibited meat ingredients derived from rats, mice and others, with the minimum detection limit of 1.00 ng/μL of genomic DNA and 1% meat addition. 10 samples randomly collected from each 3 kinds of primarily processed meat products in markets were detected by the established method,it was found that adulterated samples were detected from all products, with an adulteration rate ranging from 10% to 20%. In conclusion, the quality testing of meat products in markets could be technically supported by the established method that was with the advantages of high sensitivity, accuracy, low cost and wide range of applicability.
